An old recipe I know for beginner vegans is a browned mushroom sandwhich. I have been making this for over a decade now and it is a cheap and filling way so satisfy a sandwhich craving for sure!
- 2 slices of Rye Toasted
- Dijon Mustard
- Vegan cheese
- 1 jar or can on sliced mushrooms drained and put in a large skillet with some minced garlic and olive oil.
- A trick I learned from Julia Child is “Don’t crowd the mushrooms!”

I plan to make my own kimchi and krout this week so more on that later but if I had some krout this would have been an amazing Vegan Rueben. Being Vegan doesn’t mean only eating salads.
